The confirmation of Robert F. Kennedy as the nation’s new Health and Human Services secretary marked a huge step in the effort to Make America Healthy Again (MAHA) and one New England barbecue joint is making a big change to serve up healthier food.
Popular Westport, Connecticut eatery Walrus Alley, which touts its fare as having “southern flavors with Yankee attitude,” will be going completely free of seed oils, requiring a radical transformation in the ingredients used to produce menu items from the oil used to fry foods to its signature sauces.
Walrus Alley owner Joseph Farrell said that the decision to go seed oil-free is rooted in his own personal health journey.
“Our home has been a haven for more natural cooking, and moving the restaurant away from seed oils was a huge undertaking,” he told Fox News Digital. “At one point we realized we just had to go for it.”
Seed oils are extracted from plants and have been linked to adverse health effects, including a heightened risk of colon cancer as recently reported by Fox News Digital.

Farrell told the outlet that the transition away from the “toxic” oils is easier said than done, presenting challenges for the staff to adapt to how Walrus Alley’s food is deep-fried to what type of breads are used.
“Every sauce has to be reconfigured, including mayonnaise, which is the base for most sauces,” he said, adding that the restaurant has gotten rid of the seed oils, swapping them out with avocado oil, beef tallow, and olive oil.
“Though our change to being seed oil-free came from a personal health journey, it is always positive to see people focus on healthier options,” Farrell said, adding, “It makes us all feel better, and the food tastes better, regardless of how you get to this point.”
He also told Fox News Digital that even though other restaurants may claim to be seed oil-free, they may be missing a key factor.
“They are using beef tallow in their fryers, but it is cut with soy and stabilizers, which are unhealthy,” Farrell warned. “Or they don’t examine the products they bring in, offering burgers on seed oil-laden buns.”
“Converting to being seed oil-free really takes a great deal of reflection and reinvention on the commercial level,” he added, noting that it’s “because the industry is deeply rooted with seed oils,” he added.

The original Walrus + Carpenter was serving the artistic community of Black Rock, Connecticut for 7 years. Since then, Walrus Alley has opened in Westport, Connecticut, offering Southern hospitality to the area.”
